I am not much of a cook, but I specifically chose this topic because the meals that I make are super easy, and I wanted to encourage any other mothers like me with some {maybe} new meal ideas that won’t take too much time or break the bank. What was funny for me when putting these together was I had a lot of Mexican recipes and a lot of crockpot recipes, so you can see what my ‘go to’ recipes are!

Oven Baked Chicken Tacos

Ingredients:

  • 1-1 1/2 pounds of boneless, skinless chicken breast
  • 1 package taco seasoning
  • 1 teaspoon cumin
  • 1 tablespoon chopped Cilantro
  • 1/2 squeezed lime
  • 1 can (8 oz) tomato sauce
  • 1 can refried beans
  • shredded cheese
  • taco shells
  • your favorite toppings for Mexican food (salsa, guac, sour cream, etc.)
Directions:
  1. Preheat oven to 400 degrees.
  2. Boil chicken and shred.
  3. In a skillet combine shredded chicken, taco seasoning, cumin, cilantro, lime juice, tomato sauce and refried beans. Mix well and heat ingredients thoroughly.
  4. In a 9X13 arrange taco shells so they are standing.
  5. Add chicken mixture to each shell.
  6. Top with shredded cheese.
  7. Bake 10-12 minutes.
  8. Top with your favorite garnishes and enjoy.

End result? A delicious twist on the taco. The only downside was this recipe makes A LOT of tacos and they don’t save that great as leftovers. I think this is perfect for a big family or when you have company.

BBQ Chicken Sliders

Pulled-Barbecued-Chicken-Sandwiches-1 (1)
Ingredients:

  • 1 1/2 pounds boneless, skinless chicken breast
  • 1 cup BBQ sauce
  • 1/2 cup Italian dressing
  • 2+ Tbs. mustard
  • Slider buns or rolls

Directions:

1. Put chicken in crockpot.
2. Mix other ingredients together in a bowl.
3. Pour over chicken.
4. Cook on low 4-6 hours.
5. Shred chicken.
6. Add chicken to buns and anything else you might want to add – pickles, onions, etc.

End result? A super quick meal that even my picky toddler will devour.

Apple Chicken Quesadillas

Ingredients:

  • cooked, cup-up chicken
  • sliced up apples (I peeled them, not sure you need to and chopped them really finely to be extra sneaky)
  • grated cheese
  • tortillas

**I didn’t put amounts because it can be as much or as little as you want.**

Directions:

1. Mix apples and chicken together.
2. Sprinkle a little cheese on 1/2 of a tortilla, add apple/chicken mix, sprinkle a little more cheese.
3. Fold tortilla in half to make quesadilla.
4. Cook in skillet until cheese is melted and quesadilla is crunchy.

End result? Another super easy dish for everyone to love!
