As I gather these recipes together it REALLY FEELS LIKE FALL!  I love fall, everything about it, from back to school, to football, to cooler temps, everything pumpkin spice and the fast slide into the holiday season.  While I’m always so excited to see the various holiday décor come out in the stores, Halloween right along side Thanksgiving and Christmas, I take every chance to savor the flavors of fall.  Bring on the gourds!

Here are some squash recipes that are sure to the delight the family and usher in the change of seasons, yes, even in Texas!

Baked Acorn Squash from The Hungry Blue Bird

Growing up we didn’t eat a lot of the winter squashes.  I think it was mostly because out of our family of 6 only my mom and I liked them.  This super simple recipe is how my grandma made acorn squash and made me fall in love with these yummy veggies (ok, I think technically gourds are fruits!)  And because these squash can be so dang hard to cut, my grandma started just baking them whole and then cut them open, popping them back in the oven to melt the butter and brown sugar mixture.  YUMMO!

Paleo Stuffed Butternut Squash by Our Savory Life

Y’all this one is so tasty and it’s the whole meal, not just a side dish!  I do cheat when cooking winter squashes and I usually pierce the skin with a fork a few times and pop them in the microwave for just a bit first.  I don’t know about you but when I try to cut on raw I am always in danger of cutting off a finger!  The microwave trick helps to soften it up enough to cut it a little easier.  BTW… if any of you have a better tip for cutting these hard squashes, please do share!!!  And I personally prefer pork paired with the squash in this recipe.

Roasted Butternut Squash Quinoa Salad by One Sweet Mess

A great vegetarian (or vegan but omitting/subbing a couple ingredients) option!  It could be served as a side dish but is hearty enough to stand on its own.  And with quinoa, you’ve got your protein.  I’ve made a version of this that I also tossed in some spinach and it worked really well.

Delicata Squash Recipes from 101 Cookbooks

Ok, so this is actually multiple recipes, but I just started trying Delicata squash and stumbled upon this list, thank you Pinterest!  I can’t wait to try some of these.  Salads, pastas, veggie tacos, oh my!  Let me know which ones you try!  I think I’ll start with the Roasted Delicata Squash Tian.

And if you need something super simple for the weeknight, I love this pasta sauce!  The website even has some recipe ideas although I think all I ever done with it is toss it with some pasta.  I’ve even gotten fancy and used fresh pasta, ha ha!
