How is it that it’s already Easter? After a really quiet Easter last year, our family is ready to celebrate this year and we are going ALL out! One of my favorite things to do is to eat. I love breaking bread, hearing the clinking of the glasses, everyone’s talking over everyone… I don’t know… there’s just something special about sharing a meal at the table. We know there are a lot of “easy” recipes out there, but y’all, I’m about to make is REALLY easy for you! Want to know the secret sauce? GRAVY! Seriously, add gravy to anything and everyone will think you’re the Pioneer Woman.

Cooking with Pioneer products has been a norm in my family and literally goes back generations. My mom cooked with Pioneer, my grandmother cooked with Pioneer, heck you’ve probably cooked with Pioneer and not even realized it! The ideas are endless, the ease and convenience of their mixes takes out all the guesswork, AND you’ll feel like a super star chef when really you’re just one tired mama trying to make ALL the things come together! Pioneer has several gravy mixes, but lately, we’ve been loving the roasted flavors!

Here are super delish and most importantly, easy recipe ideas just in time for Easter! 

Roasted Chicken with Herb Gravy and Green BeansPioneer

4 cups Pioneer Roasted Turkey Gravy, prepared
1 tbsp. Thyme, fresh (or 1 tsp. is using dried)
½ tbsp. Oregano, fresh (or ½ tsp. is using dried)
3 tbsp. Butter, salted
1 clove Garlic, minced
2 lb. Green beans, trimmed and cut in half
½ cup Water

 

  1. PREPARE Pioneer Roasted Turkey Gravy, per package instructions, set aside.
  2. CHOP thyme and oregano and add to gravy, cover and let the herbs steep in the gravy while it sits, covered, off heat.
  3. ADD butter and garlic, sauté for about 2 minutes until garlic is golden, then add green beans and water, bring to boil then reduce heat to a simmer.
  4. SIMMER for 3 minutes, covered. Then uncover and cook until water has evaporated (about 2 additional minutes). Season with salt as desired.

SERVE rotisserie chicken alongside herb gravy and buttery green beans.

Brussels Sprouts with Cider Gravy Pioneer

2 cups Pioneer Roast Pork Gravy, prepared
¼ cup Olive oil
1 lb. Brussels sprouts, cut in half lengthwise
1 tsp. Salt
1 cup Apple cider
½ tsp. Thyme, dried (1 tbsp. if using fresh, picked, thyme)

 

  1. PREPARE Pioneer Roast Pork Gravy, per package instructions, set aside.
  2. ADD olive oil to large sauté pan and then fill the bottom of the pans with as many cut side-down Brussels sprouts as will fit. Add the remaining Brussels sprouts on top. Season with salt.
  3. SET flame to medium-high and sear the Brussels sprouts, stir to sear as many Brussels sprouts as you can, continuing to sear until most are a deep brown.
  4. ADD apple cider and prepared gravy to pan with Brussels sprouts, carefully as it will boil quickly, then reduce heat to medium-low and cover pan with lid.
  5. COOK for about 5 minutes, until half of the liquid has evaporated. Then remove lid and continue to cook until gravy is thick, and Brussels sprouts are soft (3-5 minutes).
  6. GARNISH with thyme and serve.

Tip: have a lid close by when adding the cider and the gravy as the liquid will boil quickly and may splatter. This is necessary to steam/braise the Brussels quickly and properly.

Chicken Broccoli Bake Pioneer

3  cups Pioneer Buttermilk Baking Mix
1 ¼ cup Milk
1 tbsp. Garlic, minced (dried or fresh)
½ tsp. Dried thyme
2 cups Pioneer Roasted Chicken Gravy, prepared
2 ½ cups Cooked chicken, shredded or diced
1 ½ cups Broccoli florets, chopped
½ cup Cheddar cheese, shredded

  1. PREHEAT conventional oven to 425˚F.
  2. ADD milk to a mixing bowl, then add Pioneer Buttermilk Baking Mix on top.
  3. MIX ingredients together until a thick, smooth batter forms; then fold in garlic and dried thyme until combined.
  4. ADD prepared Pioneer Roasted Chicken Gravy to a 13×9 inch casserole dish, top with chopped chicken and broccoli florets, then top with cheddar cheese.
  5. DROP a spoonful of batter at a time on top of chicken and gravy mixture (leaving about ½-inch or so in between spoonfuls) until entire casserole is topped with batter.
  6. BAKE for about 20 minutes or until golden brown and serve.

Tip: these can be made ahead, starting with only step 4 then storing the casserole in the refrigerator, covered. Then when ready to cook, proceed to steps 1-3 then skip to step 5. In this case the casserole may take about 5-10 minutes longer to bake.

Green Bean Casserole Recipe

2 cup Pioneer Chicken Gravy, prepared
2 can (16 oz) green beans, drained
1 can French fried onions
1/2 cup mushrooms, sliced, canned, drained

  1. Preheat oven to 350°F. Oil an 8 x 8-inch pan.
  2. Add green beans, half of onions, and mushrooms to prepared Pioneer Chicken Gravy. Pour into pan.
  3. Bake 20 minutes. Top with remaining onions.

Baked BBQ Beans Recipe

2 cup beef or pork broth
1 package Pioneer Roast Pork Gravy Mix
3/4 cup ketchup
2 tbsp. brown sugar
2 tbsp. honey or molasses
1/4 cup apple cider
1 tbsp. whole grain mustard
1/2 diced onion
2 can large white beans, drained and rinsed
1/2 cup bacon bits (optional)
1 tsp. cayenne pepper (optional)

  1. Combine broth and Pioneer Roast Pork Gravy Mix in a medium sauce pan and whisk vigorously.
  2. Heat over medium flame and add all ingredients except for the beans.
  3. Cook until mixture thickens into a sauce.
  4. Add beans and continue cooking on low heat for 5 minutes.
  5. Serve as a delicious southern side!

Instant Pot™ – Shepherd’s Pie

1 pkg. Pioneer Roasted Beef Gravy Mix
2 cups Water
1 tbsp. Olive oil
1 pc. Onion, diced
2 pc. Garlic cloves, sliced
1 lb. Button mushrooms, sliced
1 tsp. Salt
1 tbsp. Tomato paste
2 tsp. Thyme, dried
1 lb. Ground beef, lean (90%)
1 cup Frozen vegetables (carrots, corn, peas)
2 cups Mashed potatoes, prepared

  1. SAUTE using sauté function add 1 tbsp. olive oil to pot with onions, garlic, mushrooms, salt, thyme and tomato paste. Sauté for 5 minutes, until onions and mushrooms have softened and liquid has evaporated.
  2. ADD ground beef and frozen vegetables and mix to combine and break up ground beef, continue to sauté for 5 minutes.
  3. PREPARE Pioneer Roasted Beef Gravy by adding 2 cups of water to dry mix, whisking to combine, then add to pot with beef and vegetable mixture. Stir to combine and scrape all bits off of bottom of pot then turn off sauté function.
  4. PRESSURE COOK the beef, vegetable, and gravy mixture on HIGH for 10 minutes. Then spread the mixture evenly in a casserole dish or skillet.
  5. TOP with prepared mashed potatoes and SERVE.

TIP: Bake Shepherd’s Pie for 20-25 minutes in a 400˚F oven for a professional looking browned top.

Biscuit-Topped Blueberry Cobbler

1 ½ cups Pioneer Buttermilk Baking Mix
¾ cup Milk
1 ¼ cups Greek Yogurt
32 oz. Blueberry Pie Filling

  1. PREHEAT conventional oven to 425˚F.
  2. ADD milk to a mixing bowl, then add Pioneer Buttermilk Baking Mix on top.
  3. MIX ingredients together until a thick, smooth batter forms.
  4. DROP a small spoonful of batter onto a parchment lined baking sheet with about 1-inch in between scoops.
  5. BAKE for about 15 minutes or until golden brown. Cool completely.
  6. COMBINE yogurt with half (16 oz.) of the pie filling; set aside.
  7. DIVIDE yogurt mixture evenly into the bottoms of 12 serving dishes or cups. Top with remaining pie filling, dividing evenly between 12 dishes and then top with 1 biscuit and serve.

Tip: these can be made ahead, covered and chilled, then serve.

Southern Style Peach Hand Pies Recipes

Hand Pie Dough
1 cup Milk
3 cups Pioneer Buttermilk Baking Mix

Peach Filling
2 cups 
Peaches, diced
1/4 cup Brown Sugar
1 tsp. Cinnamon, ground
1/4 cup Decorative Sparkling Sugar

Egg Wash
2 each Eggs
1/4 cup Water

  1. PREHEAT oven to 400oF.
  2. To form hand pie, in a large bowl, MIX together Pioneer Buttermilk Baking Mix and milk until a dough forms, then transfer to a lightly floured surface and knead 3-4 times.
  3. ROLL the mixture out to 1/8-inch thick and cut into rounds using a 4-inch cutter.
  4. To prepare the Peach filling, fold all ingredients together in a small bowl until evenly combined.
  5. To make the egg wash, whisk eggs and water together until an even consistency.
  6. BRUSH egg wash on half of the rounds.
  7. Place 2-3 tablespoons of filling on the egg washed rounds.
  8. Lightly STRECH the remaining rounds over the filling to cover the edges of the bottom round.
  9. Crimp the edges of each pie together using a fork.
  10. Top sweet hand pies with decorative sparkling sugar.
  11. BAKE for 10-15 minutes or until golden brown.
