Three Easy Peasy Holiday Pies

We know you have a long holiday to-do list so here are a three quick and easy recipes that are well, as easy as pie 😉

 

Simple Apple Pie

Ingredients:

– 2 pre-made pie crusts

– 6-8 apples cored, peeled, and roughly diced

– 2 Tablespoons of flour

– 3/4 cup granulated sugar

– 1 Teaspoon Cinnamon

–  2 Tablespoons butter

 

Instructions:

– Pre-heat oven to 400 degrees

– Combine sugar, cinnamon and a dash of salt and mix with the diced apples

–  Pour apple mixture into pie-crust and dot with pieces of butter

– Add top crust to pan and pinch it around the edges.  Cut a few small holes in the top to let steam escape

– Bake for about 50 minutes or until golden brown

– Serve warm with a scoop of vanilla ice cream (optional)

 

Perfect Pumpkin Pie

Ingredients:

– 1 pre-made deep-dish pie crust

– ¾ granulated sugar

– 1 Tablespoon pumpkin pie spice

– 2 eggs

– 1 can pumpkin

– 1 can evaporated milk

 

Instructions:

– Pre-heat oven to 425 degrees

– Mix sugar, pumpkin pie spice and a dash of salt together

– In a separate bowl beat the eggs then stir in the pumpkin. Next add the dry ingredients and finally the evaporated milk

– Pour entire mixture int pie shell and bake for 40-50 minutes. Pie is done when you can poke it with a knife and the knife comes out clean. Cool before serving with a dollop of whipped cream.

 

No Bake Cheesecake

Ingredients:

– Pre-made deep-dish graham cracker pie crust

– 1 can evaporated milk

– 2- 8oz packages of cream cheese (softened)

– 1 teaspoon vanilla extract

– ¼ lemon juice

 

Instructions:

– Mix the cream cheese, vanilla and lemon juice together thoroughly

– Pour mixture into pie crust and cover with plastic wrap

– Chill pie in freezer for 2 ½ to 3 hours

– Serve with fresh fruit of your choice
